I had a great week! Rainy days tend to help me focus on the here and now since I'm not so preoccupied with what to do next... I spent a lot of time this week reorganizing the home, putting up Christmas decorations, cooking, reading, relaxing, and playing with the kids. In other words, we spent a lot of time at home, which made me crave something homey and sweet. This version of an apple crisp has about 1/2 the sugar of a regular crisp and uses coconut flour which you can easily substitute with gluten free all purpose flour or any other flour you have at hand. Coconut flour is all I had so that's what I used :)
Lucia's Apple Crisp (Gluten Free and Vegan)
Ingredients for filling
8 organic granny smith apples, peeled, cored, and cut into slices
1/2 cup golden raisins
1/2 cup of maple syrup (or honey)
Juice of 1/2 meyer lemon
1TB cinnamon
1/2TB pumpkin spice mix
1/4tsp cardamon
1/4 cup apple juice
1TB coconut flour
Ingredients for Crisp
1 cup GF rolled oats
1/2 cup coconut flour
1/2 cup coconut oil softened
1/2 cup brown sugar
1/4tsp baking soda
1/4tsp baking powder
pinch salt
Directions
1. Preheat oven to 375 degrees.
2. Coat a 9 x 11 baking pan with coconut oil
3. Combine apples with rest of filling ingredients and mix well. Place inside baking pan.
4. In a separate bowl combine crisp ingredients and sprinkle on top of apples. Cover and bake for 35 minutes* (*Coconut flour burns easily so do not bake crisp for the entire time without a cover. If you are using regular flour covering is not necessary)
5. Remove foil and bake an additional 5 to 10 minutes or until done.
6. Enjoy topped with vanilla ice cream or just by itself. I enjoyed mine with a cup of ginger spice tea :)
